Ingredients

Sauce

  • 1 Aubergine
  • 1 Courgette
  • 2 Onions
  • 2 Red Peppers
  • 2 Cloves Garlic, Oregano, Salt, Pepper, Olive Oil 1 tin Chopped Tomatoes Fresh Basil Tomato Puree

Meatballs

  • 1 Sausage Meat
  • 1 Red Chilli
  • Oregano, Salt and Pepper

Pasta

  • Fresh Tagliatelle Parmesan
  • Fresh Basil to serve

Directions

Chop vegetables and place in roasting tray. Lace with olive oil, season with oregano, salt and pepper. Roast until soft approx 30-40 mins, mix occasionally. Chop red chilli finely. Place sausage meat in large bowl, season with oregano (a few pinches), salt and pepper and mix together with your hands. Roll mixture into balls Рsize of cherry tomato. Fry in oiled pan, stir regularly  to cook through. Remove vegetables from oven, add tin of tomatoes, half tub of tomato puree and half packet of basil. Mix and blend until smooth. Boil pasta, drain and mix in sauce, add to meatballs. Serve with parmesan and basil.
